Community Pop-up Kitchen Carts-Run by Homeless Wellness Champion
Understanding how to eat healthy may pre-date refridgeration necessity

What if we could employ a few community wellness champions to start and run community pop-up kitchen carts? What if these could be homeless people that have shown promise and initiative, thereby offering them a small opportunity to contribute, become a community leader, and make a small amount of money? Identified champions would go through a pre training to prepare them and commit to regular trainings to keep them up to date and to connect them to the other champions.

Once prepared they would give demos (breakfast and dinner) on healthy recipes using non-perishable food items and produce sourced locally-most items that can be found in neighborhood stores. If there are recipes that are limited by available items the community can sign petitions to encourage local convenient stores to begin carrying the required items. This will help both the store owners understand the demand of the community and the community become empowered through developing a collective voice. The Tenderloin could be a pilot site and if it works the idea can spread to other food deserts/swamps.
