Convenience foods have three main deficiencies; too many carbohydrates, too much fat, or no vitamins and minerals. Vitamin and mineral fortification programs have been instituted by Public Health authorities. An example is the addition of iodine and vitamin D to milk. Staple foods of Central Market people, like pizza, hot dogs or chips, (or beer), could be fortified to provide nutritional necessities if the Food Clients won't eat right. Perhaps, low carbs and low fat versions can also be manufactured.

This project is made possible by the City and County of San Francisco, SPUR, the Mayor's Office of Neighborhood Services and the Department of Technology
